When the genesis of the waffle is traced back through time the truth about waffles begins to unfold. Waffles weren't always the sweet and savory delicacies that are the breakfast, brunch, and dinner treats of today. Ten thousand years ago they were made of cereal pulp that was cooked on hot stones. Whipped cream, strawberries, butter, and maple syrup were not on the menu back then.

Savory and sweet breakfast waffles didn't arrive on the culinary scene until the 16th century when eggs, milk and honey were mixed together to produce French waffles for elite and noble French citizens. The Americans actually made recipes pleasing to the taste buds in the 18th century. Innovative Americans added maple syrup and molasses to the finished product. Hot waffles dripping with molasses and syrup became popular American treats that were sold by street vendors in the big cities.

When a new waffle iron was patented in 1869 the waffle became a culinary rock star. The country couldn't get enough of this sweet tasting and easy eating treat. When the first electric waffle iron was introduced in 1911, recipes began to expand, and by the 1930s waffle irons and recipes were standard kitchen accessories.

The Fast Food Age of the 1950s Brought Frozen Waffles to the American Party

The 1950s introduced America to the frozen waffle with the eggy taste. People called them egos and bought them by the dozens because they were easy to heat in toasters. The peerless Belgium waffle made its debut at the New York World's Fair in 1964. Eating Belgium waffles turned into a national pastime thanks to the strawberries and whipped cream that smothered these European hotcakes.

Modern day waffles continue to go through a culinary evolutionary process. The new waffle recipes add exotic tastes as well as an incredible presence to the breakfast, lunch and dinner table. Today's waffles are not just wheat or buttermilk cakes; they are more complex concoctions that highlight their cornmeal, multigrain, or whole grain ingredients, plus adding nuts, dried fruit, granola, coconut, and other goodies to the final product make them personal favorites.

Whole grain waffles topped with yogurt, fresh fruit, and nuts or tri-colored chocolate chip waffles with whole blueberries in the recipe make eating breakfast an energy filled experience. Savory ideas like the BLT waffles, the chicken and buttermilk waffle dinner, the smoked salmon waffle, the waffle stew, and the south-of-the-border waffle make every meal an international experience.
